Colby was developed by Joseph Steinwand in Colby, Wisconsin, using a modified cheddar process where water is added during cheesemaking to rinse some of the lactose from the curd before pressing. This "washed curd" technique reduces acidity and produces a milder, more open-textured, moister cheese that retains more moisture than standard cheddar. The flavor is mild and milky — a versatile everyday cheese rather than a complex aged one. Colby-Jack (marbled with Monterey Jack) is one of the most recognizable American cheeses, combining the slightly more buttery Colby with the even milder Jack in a visually striking orange-and-white pattern. Its excellent melting properties make it a standard choice for burgers, quesadillas, and grilled cheese sandwiches where a smooth, non-stringy melt is desired.
